Ingredients:
- 4 large Granny Smith apple
- 40g chopped walnuts
- ⅓ cup mascarpone cheese
- 1 tablespoon brown sugar or sweetener like monkfruit
- ½ teaspoon ground cinnamon
Method:
- Preheat oven to 180°C. Cut the top off each apple. Remove core, leaving the base intact.
- Combine walnuts, mascarpone, sugar, and cinnamon in a bowl. Stuff mixture into apples.
- Stand apples in an ovenproof dish and fill with 2cm boiling water. Bake for 30 minutes, or until tender. Serve warm.
